Delicious Chocolate Zucchini Muffins

The glut of zucchini’s at this time of year is a cause of celebration for my kids – they know it’s chocolate zucchini muffin time.

The recipe I use is an adaptation of a cake recipe I found in ‘The best of Jackie French’ (Harper Collins, 2000) – my version has less butter & sugar, and more cocoa – and like hers, the taste is scrumptious.

Ingredients:

120 gr butter

3/4 cup brown sugar

2 eggs

1 1/2 cups grated zucchini

1 1/2 cups self raising flour

1/2 cup cocoa

3/4 cup milk

Method:

Melt butter – add sugar and eggs – then add the rest of the ingredients. Don’t overbeat. Place mix in muffin greased tins or cupcake papers. Bake at 180 c for about 20 minutes, or until firm. Place on cake rack to cool.

These freeze really well and are great lunch box fillers.
