Most basic mincing machines have a sausage making function on them. There's a bit of a knack to filling the casings evenly - try and find someone to make them with you as it's much easier with helpers.

If you’re raising your own pigs for meat, or are buying bulk pork (hopefully free range!) with the intention of producing your own smallgoods, having a good basic sausage recipe is the springboard from which you can create all kinds of sausagy delights.

Sausage making is a surprisingly fun activity if there’s a few people (and perhaps a glass of wine or two) involved. Just make sure everything you work with is clean (tools, surfaces, hands…), and that any pork you use is cold (as it makes it easier to work with). You can usually buy sausage casings at your local butcher.

Basic Sausage Recipe

Ingredients:

I kilo Shoulder pork

1 tsp Salt

1/8 tsp Nutmeg

1/8 tsp Mace

1/4 tsp Black Pepper

50 grams Stale Breadcrumbs

Method

Mince meat, mix thoroughly with other ingredients, pipe into casings.
