This afternoon I wiped out my stash of dried apricots in order to make ‘Apricot and Coconut balls’. It’s been worth creating that gap in my pantry as they are rather scrumptious – quite sweet, thanks to condensed milk, and super simple to make – just add ingredients  in a food processor and whizz before rolling into balls and coating with coconut.

They’ll be great kids lunchbox treats for the coming weeks. The recipe makes 30 plus large sized balls of yum – so I’ve put some in the freezer in an attempt to slow their rate of consumption… we’ll see how that goes…


500 grams dried apricots

2 1/2 cups of dessicated coconut, plus extra for rolling the balled mixture in.

1 tin (395gr) of condensed milk
